Step 1 - HEAT

Step 2 - TEST
Sprinkling some water on a hot pan is the best way to test for proper temperature.
Drop a small amount of water onto a heated pan and the water will immediately boil, hiss and evaporate quickly. So just sprinkle a little water into the pot and see if water droplets immediately appear in the pot, you will know whether the pot is hot enough. Step 3 - OIL
Apply butter or spread with a brush.
Step 4 - CRACK
Crack the eggs into the pan and when they begin to form, season with salt and pepper.
Step 5 - FRY
Don't rush to move and turn over ! The cast iron pan can fry the caramelized and crispy skin. If you find that it is sticky and cannot be turned over, it means that the surface is still raw and cooked and has not been fried yet.
